I traveled through Eastern Europe for 3 weeks on roughly 50 EUR per day including accommodation, food, and activities. Here is how: hostels (15-20 EUR), cooking half my meals, free walking tours, and student discounts. The countries where this worked best: Poland, Czech Republic, Hungary, and Romania. Totally possible! I did it in Portugal too. Lisbon and Porto have great hostels for 15-18 EUR. The food is cheap and delicious - a full meal with wine for under 10 EUR. Free walking tours are amazing in both cities.

Romania is incredibly underrated and cheap! I spent 30 EUR per day there including a private room. The Transylvania region is beautiful and Bucharest has a great nightlife scene.
